Elote is a popular Mexican street food of grilled corn slathered in a creamy, tangy sauce and coated with cheese and spices. Bright lime juice and fresh cilantro add a zesty finish to each charred, satisfying bite. Quick to prepare, it’s a festive side or snack for any gathering.

Ingredients

  • 4 ear corn, husked
  • 0.25 cup mayonnaise
  • 0.25 cup sour cream
  • 0.50 cup cotija cheese, crumbled
  • 1 tsp chili powder
  • 0.25 cup cilantro, chopped
  • 1 lime, cut into wedges

Steps

  1. Preheat grill to medium-high heat.
  2. Grill corn until lightly charred on all sides, about 10 minutes, turning occasionally.
  3. In a small bowl, whisk mayonnaise and sour cream until smooth.
  4. Brush sauce over each ear of warm corn.
  5. Sprinkle cotija cheese, chili powder, and cilantro evenly over coated corn.
  6. Season with salt to taste and serve with lime wedges.
